So before I share with you my PIZZA POWERCAKE
that totally worked out ;]

I wanted to tell you about day 4 of NYBBC!
Pre Workout Fuel:

Of course had to have my new obsession;
Power RiceCake with Coconut Oil, Protein Frosting & Clementine!
Kate & I were pretty sore today from our leg day yesterday..

so we did:
-5 minute warm-up on the treadmills
-4 different shoulder exercises
kettlebell swings with weights
right into - shoulder shrugs
- no rest in between
did this x 4
then...
12 reps of shoulder press with a weighted bar
right into - 12 lateral raises
did this x4
finished with 2 sets of 12 over-head should press with free weights.
Great job today Kate! ;]
After our workout, we stopped at the local farmers market!
(it just so happens to be on our way home)
It's like they read my mind; they had acorn squash for $1 a PIECE!

Also got Tomatoes for $2
& some Pepitas for some chocolate bark I plan on making ;]
So of course when I came home I had to throw them into the oven!


Just simply Sprayed with some Olive Oil
SS&P
(Sea Salt & Pepper)
and roasted them for 45 minutes at 425 Degrees!
OKAY,
so I'm super excited that my
Pizza PowerCake worked!!
I prepped the crust the night before..
Baked 425 Degrees for 25-30 Minutes
Put it in the fridge over-night
(but you could totally use it right away,
you just need to put it onto a pizza pan then top it
& put it back into the oven!)
Topped mine with some No Salt Added Tomato Sauce
Mixed with some Basil, Oregano, Nutritional Yeast, & Stevia!
-Also added some mini mushrooms, olives, artichokes, & feta!!
^Put it on a pizza pan & back into the oven for about 15 minutes at 400 degrees
Just to melt the toppings!
**Sidenote: this "crust" is not as CRISPY as you may be used to.
It's definitely more like a cake-consistency!
If you let it cool out of the oven, it's wayy easier to eat!
If you're hungry right away though, you may need a fork ;]
Pizza PowerCake Recipe!
5 Egg Whites
2 TB Flax Meal
2 TB Coconut Flour
(sub any flour here)
2 TB Psyllium Husk Powder
(sub more flour here)
2 TB Pumpkin Puree
2 TB Nutritional Yeast
(sub parm cheese or other seasoning here)
1/2 TB Xanthan Gum (or corn starch)
2 Teaspoons Baking Powder
2 TSP of Apple Cider Vinegar
3/4 Cup Coconut Milk
(sub any liquid)
few drops of stevia
Sea Salt & Pepper
Minced Garlic
Oregano
Basil
1/4 cup Chopped Red Onion
1 cup frozen kale
(you can use spinach!)
Mix everything and put into a pie pan
bake at 425 Degrees for 25-30 minutes!
Let cool, take out of pan before adding toppings
Put back into the oven for 15 minutes to melt the toppings
Let cool before cutting into a PIZZA!
Such a healthy alternative to a regular pizza ;]
Definitely try this one out!

heading out to dinner with the family & some friends before
heading down to my brother's show tonight -
he's in an awesome band called "Before You"!

I love how you put the onion, etc IN the crust before baking. Genius idea, like a focaccia bread crust!
